My love of quick and easy meals is well known. Meal delivery services are my guilty pleasure for sure. We rarely grocery shop. KP went out last weekend to grab a rotisserie chicken and came back with a bunch of junk. All of which I spent the last week binging on! This week we tried out a salmon recipe that KP and Louis really liked. I don’t care for salmon but it is KP’s favorite so I got it just for him. The servings were pretty big so he had a dinner out of this and I packed one for lunch and made a quick egg scramble with the rest of it the next morning. I made a quick salad and had it with the carrots and potatoes for dinner and breakfast the next morning.

KP hates carrots and I love them. I just made a few changes that didn’t cost us anything and made a few extra servings. For us, Blue Apron ends up being economical.
