Step 1: Prep all vegetables. Soak chopped leeks in a bowl of cold water to get rid of sand/dirt.
Step 2: apply 1 tablespoon olive oil to a large pan over medium/low heat. When the oil is simmering add leeks. Cook leeks slowly on low heat stirring occasionally. Leeks should be soft and caramelized.
Step 3: Add spinach, scallions, salt and pepper until wilted. Remove from heat to fully cooled.
Step 4: In a bowl mix cream cheese and sour cream. Add spinach and leek mix; stir thoroughly. Add lemon juice and stir.
