Olivia and I started a garden this year. I struggled with activities for her to do outside that would engage us both. I can only push the swing and race around the yard so much. So we grabbed some seeds at the local market and gave it a try. We were both pleasantly surprised by how well it did.
The zucchini went nuts and I got creative for ways to use it all up. This zucchini bread recipe is from the 50s and passed down to me from my uncles’ Mother. It is a favorite recipe of ours.
CHOCOLATE CHIP ZUCCHINI BREAD RECIPE WITH WALNUTS:
What you need:
1 cup zucchini shredded
3 cups flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1/2 tablespoon vanilla ( I use paste)
1 tablespoon cinnamon
1/2 tablespoon nutmeg
2 cups sugar
1 cup shortening (or vegetable oil)
1 cup chocolate chips
1 cup nuts (I prefer walnuts but macadamia nuts are also good)
How to Make Chocolate Chip Zucchini Bread with Walnuts:
Line two bread pans with parchment paper and preheat the oven to 325. Sift flour, salt, baking powder, soda, cinnamon, and nutmeg together in a bowl. Beat eggs, shortening, vanilla, and sugar together in a large bowl. Add dry ingredients to the wet mixture, and mix well. Add zucchini, chocolate chips, and nuts until well combined. Pour batter into prepared pans. Bake for an hour or until a toothpick comes out clean. We eat it warm with a bit of butter but I’ve serviced it with ice cream and even caramel sauce for a real treat.
